Too much iodine in the water gets absorbed by the thyroid gland, where it creates harmful molecules that damage the thyroid cells. This damage turns on a molecular alarm system inside the cells, causing them to release signals that attract immune cells. The immune system then starts attacking the thyroid because it sees its own proteins as foreign, leading to chronic inflammation and disease.
