When muscles work hard, they break down sugar quickly to make energy, which creates pyruvate and extra electrons. To keep the process going, the muscle converts pyruvate into lactate, and in that same step, it releases a hydrogen ion. This happens every time lactate is made, so lactate and hydrogen ions are always produced together in equal amounts.
