When sodium bicarbonate is swallowed, it enters the blood and increases the level of a substance that soaks up acid. This creates a stronger pull for acid to leave muscle cells and enter the blood, where it gets neutralized. As a result, muscles stay less acidic during intense activity, which helps them keep contracting forcefully for longer.
