Cows that eat grass consume large amounts of alpha-linolenic acid from plants, which gets directly absorbed and stored in their muscle fat. Their bodies also convert some of this acid into longer-chain omega-3 fats like EPA and DHA, and the antioxidants in grass prevent these fats from breaking down. This results in much higher levels of omega-3 fats in the meat.
