When cattle eat grass, they absorb beta-carotene from it. Their bodies have enzymes that normally break down beta-carotene into other compounds, but these enzymes work very slowly in cattle. Because the breakdown is too slow, beta-carotene stays in the bloodstream and gets stored in fat tissue, where it gives the fat a yellow color.
