When people eat a lot of dairy, the lactic acid in it makes the small intestine more acidic, which helps break down proteins into amino acids before they reach the gut. This means less protein gets to the colon for bacteria to break down into branched-chain fatty acids. At the same time, the lactic acid that does reach the colon gets used by certain bacteria to make more butyrate instead of acetate. The total amount of fatty acids produced stays the same, but the mix changes because the bacteria switch what they feed on.
