When older people eat protein, their gut and liver take up more amino acids, but the key amino acids that trigger muscle building — called branched-chain amino acids — mostly bypass the gut and liver and still reach the muscles. The muscles then take up these amino acids normally and keep building new protein at the same rate as in younger people, even when the gut and liver use more of other amino acids.
