When someone takes sodium bicarbonate, it increases the level of bicarbonate in the blood. This allows hydrogen ions, which build up in muscles during intense activity, to move out of the muscle cells more easily. As a result, the inside of the muscle stays less acidic, which keeps energy-producing enzymes working longer. This lets the muscles keep producing power during short bursts of activity, even when they are damaged and sore.
