When sodium bicarbonate is taken, it increases the level of bicarbonate in the blood. During intense exercise, muscles produce acid, which lowers pH and causes fatigue. The extra bicarbonate in the blood captures this acid and turns it into carbon dioxide and water. The carbon dioxide is then breathed out, which keeps the blood and muscles less acidic. This allows the muscles to keep working harder for longer before fatigue sets in.
