When sodium bicarbonate is swallowed, it enters the blood and increases the level of bicarbonate ions. These ions bind to excess acid produced by muscles during intense cycling, turning it into carbon dioxide and water. The carbon dioxide is breathed out, which keeps the blood from becoming too acidic. Even though this process reduces muscle burn, it does not make the cyclist able to ride longer before getting exhausted.
