When inorganic nitrate is consumed, it is converted to nitrite by bacteria in the mouth, then to nitric oxide in the blood and tissues. Nitric oxide relaxes blood vessels in the brain, increasing blood flow. Despite this increase in blood flow, there is no measurable improvement in memory, attention, or other thinking skills.
