Cows that eat grass consume plants rich in a specific fat called alpha-linolenic acid. This fat passes through their stomach without being fully broken down, gets absorbed into the blood, and is turned into longer-chain fats in the liver and muscles. These fats build up in the muscle tissue, making the beef much higher in n-3 fats and lowering the ratio of n-6 to n-3 fats. Cows that eat grain get very little of this fat, so their beef has far fewer n-3 fats and a much higher n-6:n-3 ratio.
