When bulls eat more grain and less forage, their rumen produces more acetate and their blood sugar rises, which triggers more insulin. Insulin turns on enzymes that build new fat molecules from scratch, especially saturated and monounsaturated fats. These new fats are stored as oil droplets inside muscle cells, making the meat more marbled. The total amount of fat increases so much that the percentage of other fats, like polyunsaturated fats, goes down even though their actual amount stays the same.
