When bulls eat grass silage instead of maize silage, the grass contains more of a specific fat called alpha-linolenic acid. Some of this fat survives digestion in the stomach and gets absorbed into the blood. The body then converts this fat into longer-chain omega-3 fats in the muscle tissue, which get stored in the fat inside the meat. This raises the amount of healthy omega-3 fats and lowers the ratio of unhealthy to healthy fats, without making the total fat in the meat go up.
