When fat from the diet enters the blood, it sticks to a protein on the inside of blood vessels called CD36. This protein pulls the fat into the vessel lining, where it builds up and blocks insulin signals. Without insulin signaling, the vessel lining stops making a chemical that keeps blood vessels relaxed. The fat buildup also breaks apart the seals between cells in the vessel wall, letting immune cells in. These immune cells release chemicals that cause scar tissue to form in the vessel wall. The fat also spills over to the muscle layer around the vessel, making it stiff and unable to relax properly. Together, the scar tissue and stiff muscle make the artery thick and hard.
