When cells are exposed to a very sugary environment, water rushes out, making the inside of the cell densely packed with molecules. This forces proteins that normally hold DNA in shape to fall off the DNA, causing the DNA to collapse into a tight, jelly-like mass. The basic packing of DNA around its core proteins stays the same, but the larger structure becomes dense and amorphous without killing the cell.
