When vitamin C is present in high amounts and there is free iron in the cell, it converts iron into a form that reacts with hydrogen peroxide to create highly destructive molecules. These molecules attack and break DNA, leading to cell damage or death. Cells with low defenses against this reaction are especially vulnerable.
